Empress of Cheese Mini Class

An Empress of Cheese Mini Class featuring small batch, artisan cheese makers in Chiapas, Puebla, Guanajuato and Queretaro, nearly all made by women and several finished in Mexico City - one washed in Mexican chocolate porter beer, another marinated for months in olive oil, one wrapped in avocado leaves and a fourth bathed in tempranillo red wine, amongst the dozen we tasted. One was a cheese I'd been wanting to try for a while - corazon de mantiquilla, heart of butter, a very special cheese from Chiapas. We'll cover the history of Mexican cheeses and explore artisan cheese making in Mexico, tasting and pairing the cheeses with local beverages.  This class is a private event.
