San Miguel de Allende Mini Cheese Class

Our next San Miguel de Allende cheese class is a mini class featuring half a dozen or so cheeses sourced from small batch, artisan cheese makers in Chiapas, Puebla, Guanajuato and Queretaro, nearly all made by women and several finished in Mexico City - one washed in Mexican chocolate porter beer, another marinated for months in olive oil, one wrapped in avocado leaves and a fourth bathed in tempranillo red wine, amongst the dozen we tasted. One was a cheese I'd been wanting to try for a long time - corazon de mantiquilla, heart of butter, a very special cheese from Chiapas. We'll cover the history of Mexican cheeses and explore artisan cheese making in Mexico, tasting and pairing the cheeses with local beverages.
